Kuthiravali Aval
Ingredients:
1 cup Kuthiravali Aval (Barnyard Millet Flakes)
1/4 cup finely chopped vegetables (carrots, peas, bell peppers) 1 small onion, finely chopped 2 green chilies, finely chopped
1/2 teaspoon mustard seeds
1/2 teaspoon urad dal (black gram) Few curry leaves
2 tablespoons peanuts
1 tablespoon oil
Salt to taste
A pinch of turmeric powder Chopped coriander leaves for garnish
Preparation:
Rinse Kuthiravali Aval in water and set aside.
Heat oil in a pan, add mustard seeds, urad dal, and let them splutter.
Add peanuts and sauté until golden brown. Add chopped onions, green chilies, and curry leaves.
Sauté until onions are translucent. Add finely chopped vegetables, turmeric powder, and salt. Cook until vegetables are tender. Add Kuthiravali Aval to the mixture.
Mix well and cook for 2-3 minutes. Garnish with chopped coriander leaves.
Serve: Enjoy Kuthiravali Aval Upma hot as a nutritious breakfast or light dinner.
